Tiramisu is one of the most known italian desserts and doesn’t need big introductions. Its origins are disputed between different regions and even about its name there are several legends.
The preparation is simple, here the traditional recipe.
Ingredients
- Cocoa powder Coffee (better espresso)
- Chocolate flakes
- 500 gr. mascarpone cheese
- 6 eggs
- 120 gr. sugar
- 400 gr. of savoiardi (ladyfingers)
Procedure
- Prepare enough coffee to soak the ladyfingers, add some sugar and let cool
- Whip the egg yolks with half of the sugar until you get a light and creamy compound
- Whip (not too long) the mascarpone until it becomes creamy, add the eggs and sugar mixture prepared earlier
- Whip the egg whites with a pinch of salt until they become stiff, add the remaining half of sugar and, with a wooden spoon, add everything gradually and gently into the mixture of mascarpone cheese and egg yolks
- That’ s all for the cream of the tiramisu
- Put in a container a layer of ladyfingers and pour some coffee without soaking them too much
- Cover the biscuits with a layer of mascarpone cream and sprinkle the surface with a little cocoa powder
- Have then the second layer of ladyfingers in the opposite direction to the previous one
- Cover with the remaining cream and level out with a spatula
- Sprinkle the surface of your Tiramisu with plenty of cocoa powder and add a handful of chocolate flakes
- Store in refrigerator for several hours before serving
